Butternut Squash + fall vibes

It’s October oof. This week I got really excited for fall and bought butternut squash!! It was only $1.48 and lasted me all four lunches! which means I only spent ~$0.40 per meal on the squash. I love math and saving money!

I only made four lunches this week instead of 5, and will probably continue to do this, because I had work at 1 and I got lunch with my shift.

ANYWAYS, here’s how I made it.

Roasted Chickpeas, Actually Good Kale, Roasted Butternut Squash, and white rice

Roasted Chickpeas: I like to make these because they tend to last better over the week, since there’s less moisture in them.

  • Can of chickpeas
  • Olive oil
  • Salt & pepper, and any other spices you like (I used an Italian herb mix)

First, preheat the oven to 425º. Drain the chickpeas and pat them dry on a paper towel. Put them in a baking sheet with olive oil, salt and pepper, and whatever spices. Mix with your hands until all the chickpeas are coated and then bake for around 15-20 minutes, until chickpeas are golden and a little dried out (sounds gross but they reeaaallly aren’t).

Next thing I made:

Actually Good Kale: everyone hates on me because I like kale but this is a really good recipe, it makes it taste good but not bad for you.

  • 1/4 large onion or 1/2 medium onion
  • olive oil
  • 1 bunch kale
  • Juice of 1 small lemon
  • salt and pepper

Slice the onion into thin slices. Sauté the onion in a pan with a tablespoon of olive oil over low heat until soft and caramelized. Wash and cut kale and add to the pan. Cook until soft. Add lemon juice and salt and pepper.

Roasted Butternut Squash: very good

  • Butternut Squash
  • Olive Oil
  • Salt and Pepper

Preheat oven to 425º. Peel, seed, and cut butternut squash into 1-inch chunks. Place on baking sheet with olive oil. Roast for around 20 minutes or until soft and golden. One side can be a lil burnt it makes it taste good lol. Sprinkle with salt and pepper.

That’s all!! And then I put it all in my containers with some white rice! It’s good with chili sauce and basically any other flavor groups because it’s pretty neutral.

PS, this was only $1.88 per serving!!!!!!
